Russian Blini With Smoked Salmon and Cream Cheese — Traditional Russian Pancakes
Blini are traditional Russian pancakes — thin, soft and golden, similar to French crêpes but with a centuries-old history. This version filled with smoked salmon and cream cheese is one of the most beloved combinations, often served at celebrations and special breakfasts.
Ingredients (for about 8 blini / 4 servings):
- 250 g wheat flour
- 2 large eggs
- 500 ml lukewarm milk
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 tablespoons sunflower oil (plus a little for the pan)
- 200 g smoked salmon, thinly sliced
- 200 g cream cheese
- Fresh dill, finely chopped
- A little lemon juice
- Salt and freshly ground black pepper (to taste)
Preparation:
- In a large bowl, beat the eggs with the sugar and salt until dissolved.
- Gradually add the lukewarm milk, stirring constantly, then the sifted flour — mix until you have a smooth, lump-free batter.
- Add 2 tablespoons of sunflower oil, mix well and let the batter rest for 15 minutes.
- Heat a non-stick pan over medium heat, lightly grease with oil and cook the blini: one large spoonful of batter per pancake, 1–2 minutes per side, until golden.
- Let the pancakes cool slightly, then spread each with cream cheese.
- Place slices of smoked salmon on top, sprinkle with fresh dill and a few drops of lemon juice, and season lightly with salt and pepper.
- Roll up the pancakes, cut them in half for serving and serve immediately — warm or at room temperature.
