French mille-feuille — the classic dessert with crispy pastry layers and patisserie cream
Mille-feuille, which in French means “a thousand leaves”, is the emblematic dessert of French pastry: three thin layers of crispy puff pastry, filled with soft vanilla patisserie cream and crowned with a cloud of powdered sugar. Simple in ingredients, but impressive in presentation — here is how to prepare it at home.
Ingredients (for 6–8 servings):
- 1 pack of puff pastry (about 500 g), thawed
- 500 ml milk
- 4 egg yolks
- 100 g sugar
- 40 g cornstarch
- 1 vanilla pod (or 1 teaspoon of vanilla extract)
- 200 ml whipping cream, cold
- Powdered sugar for dusting
Preparation steps:
- Preheat the oven to 200°C. Spread the puff pastry on a baking sheet lined with parchment paper, prick it with a fork and cover it with another baking sheet so it stays flat; bake for 15–20 minutes until golden. Cool completely.
- For the patisserie cream: bring the milk with the vanilla pod to a gentle boil. In a bowl, whisk the yolks with the sugar until pale, add the cornstarch, then pour in the hot milk slowly while stirring.
- Return the mixture to the saucepan and simmer over low heat, stirring constantly until it thickens. Cool the cream, covering it with plastic wrap in contact with the surface to prevent a skin from forming.
- Whip the whipping cream until soft peaks form and gently fold it into the cooled patisserie cream.
- Cut the baked pastry into 3 equal rectangles. Place the first layer on a plate, spread with half the cream, place the second layer, spread with the remaining cream, and close with the third layer.
- Dust with powdered sugar. Chill in the refrigerator for at least 2 hours before cutting — use a sharp knife with a sawing motion so the pastry layers don’t break.
Preparation time: ~40 minutes (plus ~20 minutes baking and 2 hours chilling). Servings: 6–8.
