Grilled Halloumi — the Mediterranean Appetizer with a Golden Crust
The Cypriot cheese that does not melt in the fire: slices of halloumi grilled, with a crispy golden crust, lemon and oregano — the Mediterranean appetizer served hot.
Halloumi is the traditional cheese of Cyprus, made with sheep’s, goat’s and often cow’s milk, known for its high melting point — so it can be grilled without melting, taking on a crispy golden crust and a soft, melted interior. This simple Mediterranean appetizer is served hot, with lemon and oregano.
INGREDIENTS:
- 500 g halloumi cheese
- 2 tablespoons extra virgin olive oil
- 1 lemon (juice squeezed)
- 1 teaspoon dried oregano (or dried mint)
- Freshly ground black pepper, to taste
- Chopped fresh parsley (for garnish)
PREPARATION STEPS:
- Cut the halloumi cheese into slices about 1 cm thick and dry them well with kitchen paper — a dry surface gives a better crust.
- Lightly brush the slices with olive oil on both sides.
- Heat the grill or a grill pan well over medium to high heat.
- Place the halloumi slices on the grill and cook 2–3 minutes on each side, until they take on golden marks and a crispy crust.
- Remove from the heat and immediately sprinkle with fresh lemon juice, oregano and black pepper.
- Serve hot, garnished with fresh parsley — with pita bread or as part of an appetizer platter.
Preparation time: 5 minutes | Cooking time: 6 minutes | Total: ~10 minutes
