Homemade granola with honey, nuts and dried fruit — a crunchy, energizing breakfast
INGREDIENTS (4–6 servings)
- 300 g oats (rolled oat flakes)
- 100 g mixed nuts (almonds, walnuts, hazelnuts), roughly chopped
- 80 g dried fruit (raisins, dried apricots, chopped dates)
- 80 ml honey
- 60 ml coconut oil (or light olive oil)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 pinch of salt
PREPARATION STEPS
- Preheat the oven to 160°C and line a baking tray with parchment paper.
- In a large bowl, mix the oats with the cinnamon and the salt.
- In a small saucepan, gently warm the honey with the coconut oil and the vanilla, until they melt and combine into a uniform mixture.
- Pour the liquid mixture over the oats and stir well, until every flake is coated.
- Add the chopped nuts and stir again.
- Spread the mixture on the tray in a thin layer and bake for 25–30 minutes, stirring every 10 minutes so it does not burn and bakes evenly.
- Remove from the oven and leave to cool completely — the granola becomes crunchy precisely as it cools.
- Once cooled, mix in the dried fruit and store in an airtight jar, where it stays fresh for up to 2 weeks.
Preparation time: 10 minutes | Baking time: 25–30 minutes | Servings: 4–6
TIP: Serve the granola with Greek yogurt and fresh seasonal fruit, or with cold milk for a complete, energizing breakfast.
