Lebanese fattoush — Mediterranean salad with toasted pita bread and sumac
Ingredients (4 servings):
- 2 pita breads
- 1 large romaine lettuce, chopped
- 2 ripe tomatoes, cut into pieces
- 1 cucumber, sliced
- 4–5 radishes, thinly sliced
- 1 spring onion or half a red onion, thinly sliced
- 1 bunch of fresh parsley, chopped
- 10 fresh mint leaves
- 60 ml extra virgin olive oil
- Juice of 2 lemons
- 2 tablespoons sumac (plus a little for the top)
- 1 garlic clove, crushed
- Salt to taste
Preparation steps:
- Heat the oven to 180°C. Cut the pita breads into triangles, drizzle with a little olive oil and salt, and bake for 8–10 minutes until golden and crunchy. Let them cool.
- Wash and cut all the vegetables into not-too-small pieces and place them in a large bowl.
- Prepare the dressing: in a small bowl mix the lemon juice, olive oil, sumac, crushed garlic and salt until well combined.
- Pour the dressing over the vegetables and toss gently so they are coated on all sides.
- Just before serving, break the toasted pita into pieces, add to the salad, sprinkle a little sumac on top, toss lightly and serve immediately so the bread doesn’t soften.
Preparation time: 15–20 minutes. Servings: 4.
