Grape-leaf sarma — traditional Balkan rolls with minced meat and rice
Sarma, the well-known grape-leaf rolls, are among the most beloved dishes of Balkan cuisine, with roots reaching deep into Ottoman and Mediterranean tradition. They are prepared in almost every home during family celebrations, weddings and weekend dinners. The combination of minced meat with rice, wrapped in soft grape leaves and simmered slowly in tomato sauce, makes sarma a dish that brings generations together around the table.
Ingredients (serves 4–6):
- 30–40 fresh or preserved grape leaves
- 500 g minced meat (beef, or a beef–pork mix)
- 1 cup (about 150 g) rice
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 3 tbsp olive oil
- 1 tsp paprika (sweet red pepper)
- Salt and black pepper to taste
- Half a bunch of fresh parsley, chopped
- A few fresh mint leaves (optional)
- 2 cups meat stock or hot water
- 1 cup tomato sauce or crushed tomatoes
- 1 lemon and yogurt, for serving
Preparation:
- Prepare the leaves: wash well and drain. If preserved, soak 5 minutes in boiling water to soften and remove excess salt.
- In a pan, heat the olive oil and sauté the onion and garlic 3–4 minutes until soft. Add the minced meat and brown 5 minutes, then add the rice, paprika, salt, pepper and parsley. Stir 2 minutes and let cool slightly.
- Place a grape leaf shiny-side down, spoon 1–2 tablespoons of filling in the center, fold the sides in and roll tightly to form a slim roll.
- Line the bottom of the pot with a few grape leaves and arrange the sarma close together, seam-side down, so they do not open during cooking.
- Pour over the meat stock and tomato sauce until they cover about half of the sarma. Place a heavy plate on top to press them down lightly.
- Cover the pot and simmer on low heat 35–45 minutes, until the rice is fully tender.
- Serve warm, with lemon slices and a spoonful of yogurt on top, if desired.
Prep time: about 30 minutes. Cook time: 40–45 minutes. Serves 4–6.
Sarma keep 2–3 days in the refrigerator and are even better the next day — so serve them warm with lemon slices and a spoonful of yogurt.
